- 2 cups (480 ml) water
- Zest and juice of one lemon

- In a medium saucepan set over medium-high heat, combine the mixed berries, sugar, water, lemon zest, and lemon juice.
- Bring the mixture to a quick boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally, until the berries are soft and the sugar is dissolved.
- Remove from heat and let the mixture cool slightly.
- Transfer the mixture to a blender and puree until smooth.
- Strain the puree through a fine-mesh sieve into a bowl to remove seeds and pulp, pressing down with a spatula to extract as much liquid as possible.
- Chill the strained mixture in the refrigerator for at least 2 hours or until completely cold.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until the sorbet is thick and creamy.
- Transfer the sorbet to an airtight container and freeze for at least 2 hours or until firm before serving.
