Mixed Berry Sorbet and Vanilla Shortbread Cookies

Description

Nothing sends a burst of summer fruitiness as this colorful and flavorful berry sorbet. It’s as fun as it is to make as it is to eat!


Ingredients

(adapted from the blog “Tartlette”)

  • 3 cups fresh or frozen mixed berries of your choice
  • 1 cup sugar
  • 2 cups water
  • zest and juice of one lemon

Instructions

  1. In a medium saucepan set over medium high heat, place the berries and the rest of the ingredients in a large pot and bring to a quick boil.
  2. Reduce the heat to low and simmer 10 minutes.
  3. Remove from the heat and let cool completely.
  4. Puree until smooth in a blender or food processor and then strain through a fine mesh chinois (strainer).
  5. Process in your ice cream machine according to the manufacturer’s instructions. I made my sorbet in the afternoon and we had to freeze it overnight for it to really set properly.
