Description

Miso ramen is the rich, savory, deeply comforting bowl of noodles that Japanese ramen shops have turned into an art form. This home version uses chicken broth enriched with white miso, tahini, and soy sauce to create a broth that approaches the complexity of an all-day stock. Topped with a soft-boiled egg, corn, and chashu pork, it is the kind of bowl you build a whole evening around.

Ingredients

Units
  • 4 portions fresh ramen noodles (or dried ramen)
  • 6 cups chicken broth
  • 1/4 cup white miso paste
  • 2 tablespoons tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 soft-boiled eggs, halved
  • 4 slices chashu pork or roasted pork belly
  • 1 cup corn kernels
  • 4 green onions, sliced
  • Nori sheets
  • Chili oil for drizzling

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Cook garlic and ginger 1 minute until fragrant.
  2. Add the chicken broth and bring to a simmer. Cook 10 minutes.
  3. In a bowl, whisk the miso paste, tahini, soy sauce, mirin, and sesame oil with a ladleful of the hot broth until smooth. Pour back into the pot. Do not let the broth boil after adding miso — it kills the live cultures and dulls the flavor.
  4. Cook the ramen noodles according to package directions. Drain.
  5. Divide the noodles among 4 bowls. Ladle the miso broth over the noodles. Top with soft-boiled egg halves, chashu pork, corn, green onions, nori, and a drizzle of chili oil.

Notes

  • Never boil the broth after the miso goes in; keep it just below a simmer so the paste does not turn flat.
  • Tahini gives the broth the creamy body of a pork-bone broth without hours of simmering.
  • For the soft-boiled eggs, boil 6.5 minutes from a rolling boil, then straight into an ice bath. Peel when cold.
