These Mint Chocolate Popsicles are a refreshing and creamy treat, combining the coolness of mint with rich chocolate, perfect for a hot summer day.

- 1 14-oz can coconut milk
- 1/4 cup honey or sugar
- 1 cup loosely packed fresh mint leaves
- 1 cup fresh spinach
- 1/2 cup dark or milk chocolate (chips or a roughly chopped bar)
Instructions
- Add coconut milk and honey to a medium saucepan over medium-low heat. Heat until hot and steaming, but not boiling, stirring occasionally.
- Remove from heat and add mint leaves. Stir to combine and let the mixture steep for 15 minutes to infuse the mint flavor.
- Transfer the mixture to a blender, add the spinach, and blend until smooth.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Distribute the chocolate evenly among the molds, gently stirring each to incorporate the chocolate throughout the mixture.
- Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
- To remove popsicles from the molds, run warm water over the outside of the mold for a few seconds, then gently pull out the popsicles.
Notes
For a stronger mint flavor, let the mint leaves steep longer. Use dark chocolate for a richer taste, or milk chocolate for a sweeter version. Store popsicles in the freezer for up to 2 weeks. If you don’t have popsicle molds, small paper cups and wooden sticks can be used as an alternative.
