Description

These Mint Chocolate Popsicles are a refreshing and creamy treat, combining the coolness of mint with rich chocolate, perfect for a hot summer day.


Ingredients

  • 1 14-oz can coconut milk
  • 1/4 cup honey or sugar
  • 1 cup loosely packed fresh mint leaves
  • 1 cup fresh spinach
  • 1/2 cup dark or milk chocolate (chips or a roughly chopped bar)

Instructions

  1. Add coconut milk and honey to a medium saucepan over medium-low heat. Heat until hot and steaming, but not boiling, stirring occasionally.
  2. Remove from heat and add mint leaves. Stir to combine and let the mixture steep for 15 minutes to infuse the mint flavor.
  3. Transfer the mixture to a blender, add the spinach, and blend until smooth.
  4. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  5. Distribute the chocolate evenly among the molds, gently stirring each to incorporate the chocolate throughout the mixture.
  6. Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
  7. To remove popsicles from the molds, run warm water over the outside of the mold for a few seconds, then gently pull out the popsicles.

Notes

For a stronger mint flavor, let the mint leaves steep longer. Use dark chocolate for a richer taste, or milk chocolate for a sweeter version. Store popsicles in the freezer for up to 2 weeks. If you don’t have popsicle molds, small paper cups and wooden sticks can be used as an alternative.
