- 2 cups Harvest Snaps onion thyme lentil bean crisps
- 1 large sweet potato, diced
- 1 teaspoon olive oil
- 1/2 teaspoon fresh thyme, chopped
- 1 red onion, sliced
- 1 pretzel bun
- 2 pieces of butter lettuce
- Salt and pepper to taste
- Your choice of burger toppings (e.g., tomato slices, avocado, cheese)
Instructions
- Add Harvest Snaps onion thyme lentil bean crisps to a food processor and pulse until powdered, about 30 seconds. Set aside.
- Microwave the diced sweet potato for 10 minutes or until soft. Allow to cool slightly.
- In a bowl, mash the sweet potato and mix in the powdered crisps, olive oil, and chopped thyme. Season with salt and pepper to taste.
- Form the mixture into a patty shape.
- Heat a non-stick skillet over medium heat and cook the patty for 5-7 minutes on each side until golden brown and heated through.
- In the same skillet, add the sliced red onion and cook until caramelized, about 8-10 minutes.
- Assemble the burger by placing the patty on the pretzel bun, topping with caramelized onions, butter lettuce, and any additional toppings of your choice.
