Description

This mighty meaty veggie burger combines the hearty flavors of sweet potato and lentil bean crisps, topped with caramelized onions and fresh lettuce, all nestled in a pretzel bun.


Ingredients

  • 2 cups Harvest Snaps onion thyme lentil bean crisps
  • 1 large sweet potato, diced
  • 1 teaspoon olive oil
  • 1/2 teaspoon fresh thyme, chopped
  • 1 red onion, sliced
  • 1 pretzel bun
  • 2 pieces of butter lettuce
  • Salt and pepper to taste
  • Your choice of burger toppings (e.g., tomato slices, avocado, cheese)

Instructions

  1. Add Harvest Snaps onion thyme lentil bean crisps to a food processor and pulse until powdered, about 30 seconds. Set aside.
  2. Microwave the diced sweet potato for 10 minutes or until soft. Allow to cool slightly.
  3. In a bowl, mash the sweet potato and mix in the powdered crisps, olive oil, and chopped thyme. Season with salt and pepper to taste.
  4. Form the mixture into a patty shape.
  5. Heat a non-stick skillet over medium heat and cook the patty for 5-7 minutes on each side until golden brown and heated through.
  6. In the same skillet, add the sliced red onion and cook until caramelized, about 8-10 minutes.
  7. Assemble the burger by placing the patty on the pretzel bun, topping with caramelized onions, butter lettuce, and any additional toppings of your choice.
