Description

Sweet and savory figs meet Manchego cheese and caramelized shallots on toasted baguette slices. A perfect appetizer for any occasion.


Ingredients

  • 1/2 baguette
  • 6 figs, quartered
  • 1 shallot, sliced thin
  • 1 tbsp butter (14 g) butter
  • 1/2 cup (118 ml) Labne yogurt cheese
  • 1/2 cup (118 ml) jalapeño jelly
  • 1/3 cup (79 ml) Manchego cheese, shredded
  • cilantro leaves, parsley, or arugula and fresh figs

Instructions

  1. Heat butter in a small skillet over medium heat, add shallots and cook until browned, stirring occasionally. About 5 minutes.
  2. Slice baguette on the diagonal, about 1/2 inch thick. Brush with olive oil or butter. Broil or toast until browned. Watch carefully, as they can burn quickly.
  3. Place toasted baguette slices on a baking sheet. Spread each piece with Labne, top with jalapeño cheese and a fig quarter. Sprinkle with cheese and place under the broiler until cheese melts. Watch closely.
  4. Garnish with cilantro, parsley, or arugula and figs. Serve immediately.

Notes

  • For best results, use a high-quality baguette with a crisp crust.
  • If you don’t have Labne, substitute plain Greek yogurt or ricotta cheese.
  • To make ahead, prepare the crostini and store them separately from the toppings; assemble just before serving to prevent sogginess.
