- Pepper
- 2 sprigs of fresh thyme (washed and dried)
- 0.5 pomelo (or other favorite citrus, peeled and sliced)
- multigrain seeded crackers
- plain salted crackers
- Castello havarti cheese
- Castello blue cheese
- 0.5 oz (14 g) pistachios
- 0.5 recipe pear chutney (recipe below)
- 2 oz (57 g) Italian salami (sliced.)
Instructions
- Preheat oven to 375°F (190°C).
- Coat pears in sugar, cinnamon, and lemon juice. Place on a baking sheet and roast for 25 minutes, or until fork tender.
- Meanwhile, heat a skillet over medium-high heat and coat with olive oil. Add shallots and garlic; cook until fragrant.
- Add ginger, red pepper flakes, apple cider vinegar, agave, and cloves to the skillet and simmer, stirring occasionally, while pears cook.
- When pears are finished roasting, allow to cool slightly, then cut into cubes. Remove and discard cloves.
- Add pears, salt, and pepper to the skillet. Fold pears in well, then transfer the mixture to a container.
- Leave to cool to room temperature, then chill in the refrigerator for at least 4 hours, preferably overnight.
- Cheese Board Assembly
- Arrange all ingredients on a slab or marble board.
- Cut slices of havarti cheese and break up some of the blue cheese, leaving the rest on the board.
Notes
- For a smoother chutney, use an immersion blender to partially puree the cooked pears before chilling.
- To adjust the sweetness, add more or less agave nectar depending on the sweetness of your pears.
- Store chutney in an airtight container in the refrigerator for up to 2 weeks; the flavors will deepen over time.
