Loaded Waffle Batter with Maple and Bacon

Description

Why have a waffle drizzled with syrup and a slice of bacon on the side when you can have a salty and sweet waffle batter all in one?


Ingredients

Scale
  • 68 slices of bacon
  • 2 Tbsp butter, melted
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp pure maple syrup (plus more for serving)
  • 1 cup of milk
  • 1 egg

Instructions

  1. pre-heat your waffle iron
  2. cut bacon into pieces small enough to fit across your waffle iron, I cut each piece of bacon into thirds
  3. cook bacon on the waffle iron, 2 pieces per section (my iron has two sections), close lid and cook 2 minutes, rotate the bacon, close lid and cook another minute or two to your desired crispness
  4. lay the bacon on a paper towel to absorb the grease, and drain excess grease from thewaffle iron
  5. to make the waffle batter, whisk together the flour, baking powder, and salt
  6. in another bowl whisk together the milk, egg, syrup and the melted butter
  7. pour the wet ingredients over the dry, and mix just until combined
  8. pour 1/2 cup batter (or what is recommended for your waffle iron) and spread almost the the edges
  9. place 1 or 2 pieces of bacon in the center of each waffle
  10. close the lid, and cook until browned and crisp
  11. waffles can be kept in a 200 F. oven while you complete the remaining waffles
