Description

Mediterranean-inspired hummus bowls topped with flavorful Greek chicken and fresh veggies. A vibrant and healthy meal.


Ingredients

  • 2 cups (473 ml) Hummus
  • 227 g (8 ounces) Feta
  • 1 Persian Cucumber
  • 1 cup (237 ml) Cherry Tomatoes
  • 1/2 cup (118 ml) Kalamata Olives
  • Pita Pockets
  • Pickled Red Onions

Instructions

  1. Make the easy Greek Chicken:
  2. Assemble the hummus bowls:
  3. Spread the hummus in an even layer in bowls or on a serving platter. Top with the vinaigrette coated chicken. Scatter feta, cucumbers, tomatoes, olives and pickled onions on top. Drizzle with remaining vinaigrette. Serve with pita chips and optional garnishes.

Notes

  • For optimal flavor, marinate the chicken in the vinaigrette for at least 30 minutes before cooking.
  • To make this recipe vegan, substitute the feta cheese with crumbled vegan feta or nutritional yeast.
  • Store leftover hummus and chicken separately in airtight containers in the refrigerator for up to 4 days.
