Lime and Lemongrass Chicken

Description

Sweet and savory chicken nibbles with a vibrant citrusy punch. Perfect for a weeknight dinner or a casual get-together.


Ingredients

  • 2 lbs (907 g) chicken nibbles (or chicken wings)
  • 2 tablespoons raw/organic honey
  • 2 tablespoons coconut aminos
  • 8 drops food grade lime essential oil
  • 8 drops food grade lemongrass essential oil
  • 2 cloves garlic (minced)
  • 1 teaspoon sea salt

Instructions

  1. Combine honey, coconut aminos, lime essential oil, lemongrass essential oil, garlic, and sea salt in a large bowl.
  2. Add chicken nibbles and mix thoroughly.
  3. Cover and refrigerate for 3-8 hours.
  4. Preheat oven to 220°C (428°F).
  5. Line one or two baking trays with foil and place a wire rack on top.
  6. Remove chicken from marinade and place on the wire rack(s).
  7. Brush with some of the marinade.
  8. Bake for 15 minutes.
  9. Turn chicken over, brush with remaining marinade, and bake for another 15 minutes, or until cooked through.

Notes

  • For best results, use bone-in, skin-on chicken nibbles for maximum flavor and crispiness.
  • If you don’t have coconut aminos, soy sauce or tamari can be substituted, but the flavor will be slightly different.
  • Leftovers can be stored in the refrigerator for up to 4 days and reheated in the oven or microwave.
