Description

This Tequila Lime Dressing combines the zesty flavors of lime and cilantro with a hint of tequila, perfect for adding a vibrant kick to your salads.


Ingredients

  • 3 tbsp fresh lime juice
  • 1 tbsp honey
  • 2 tbsp tequila
  • 1/4 cup olive oil
  • 1/2 bunch cilantro, washed and ends trimmed
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a food processor, add the fresh lime juice, honey, and tequila. Pulse to combine the ingredients thoroughly.
  2. Add the cilantro to the mixture and process until smooth, ensuring the cilantro is well incorporated.
  3. Set the food processor to the lowest setting and slowly drizzle in the olive oil, allowing it to emulsify with the other ingredients.
  4. Season the dressing with salt and pepper to taste, adjusting as necessary.

Notes

Dressing will keep in the fridge for up to 7 days. As the dressing cools, it will thicken; add a splash of water and stir to thin. This dressing pairs well with salads featuring spinach, jicama, mango, and avocado.
