Instructions
- In a food processor, add the fresh lime juice, honey, and tequila. Pulse to combine the ingredients thoroughly.
- Add the cilantro to the mixture and process until smooth, ensuring the cilantro is well incorporated.
- Set the food processor to the lowest setting and slowly drizzle in the olive oil, allowing it to emulsify with the other ingredients.
- Season the dressing with salt and pepper to taste, adjusting as necessary.
Notes
Dressing will keep in the fridge for up to 7 days. As the dressing cools, it will thicken; add a splash of water and stir to thin. This dressing pairs well with salads featuring spinach, jicama, mango, and avocado.
