Description
Jerk chicken is Jamaica’s gift to the grilling world — a fiery, aromatic, deeply complex preparation that originated with the Maroon people, descendants of escaped enslaved Africans who developed the technique in the Blue Mountains. The marinade is built on Scotch bonnet peppers and allspice (called pimento in Jamaica), and the chicken is traditionally cooked over pimento wood smoke. The heat is fierce but layered, the spice is warm and earthy, and the char from the grill adds a smoky dimension that no oven can fully replicate.
Ingredients
- 4 pounds bone-in, skin-on chicken pieces (thighs and legs preferred)
- 6 Scotch bonnet peppers, stems removed, roughly chopped (use fewer for less heat)
- 1 bunch scallions (about 8), roughly chopped
- 6 cloves garlic
- 2-inch piece fresh ginger, roughly chopped
- 3 tablespoons soy sauce
- 2 tablespoons fresh lime juice
- 2 tablespoons vegetable oil
- 2 tablespoons ground allspice
- 1 tablespoon dried thyme (or 3 tablespoons fresh thyme leaves)
- 1 tablespoon brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
Instructions
- Blend all the marinade ingredients (everything except the chicken) in a food processor or blender until it forms a rough paste. It should be thick but pourable. Wear gloves when handling the Scotch bonnets — their oil will burn your skin.
- Score the chicken pieces deeply with a knife — 3 or 4 cuts to the bone on each piece. This allows the marinade to penetrate. Place the chicken in a large bowl or zip-top bag and pour the marinade over, rubbing it into every cut and crevice. Refrigerate for at least 6 hours, ideally 24 hours.
- Remove the chicken from the refrigerator 30 minutes before cooking. Prepare a grill for two-zone cooking: high direct heat on one side, low indirect heat on the other. If using charcoal, add soaked pimento or allspice wood chips for smoke.
- Place the chicken skin-side down over indirect heat. Close the lid and cook for 25-30 minutes, turning once, until nearly cooked through.
- Move the chicken to the direct heat side. Grill for 3-4 minutes per side, watching carefully for flare-ups from the dripping fat. The skin should char and blister in spots — some blackening is expected and desirable.
- Check for doneness — the internal temperature should reach 165°F at the thickest part. Let rest for 5 minutes before serving.
- Serve with rice and peas, festival (fried dumplings), or hard dough bread.
Notes
- Scotch bonnet peppers are essential and cannot be substituted with jalapenos, which have a completely different flavor profile. If you cannot find Scotch bonnets, habaneros are the closest alternative.
- Marinating for 24 hours makes a dramatic difference. The acid and salt in the marinade tenderize the chicken while the spices penetrate deep into the meat.
- Score the chicken to the bone before marinating. Shallow surface cuts are insufficient — the marinade needs channels to reach the center of each piece.
