- 2 cups coarsely chopped fresh blueberries
- 1 cup whole fresh blueberries
- 1/4 cup fresh lemon juice
- 3 tablespoons chopped fresh cilantro
- 1 jalapeño pepper, seeded and minced
- 1/3 cup diced red bell pepper
- 1/2 teaspoon salt
Instructions
- In a large bowl, combine 2 cups coarsely chopped fresh blueberries, 1 cup whole fresh blueberries, 1/4 cup fresh lemon juice, 3 tablespoons chopped fresh cilantro, 1 seeded and minced jalapeño pepper, 1/3 cup diced red bell pepper, and 1/2 teaspoon salt.
- Toss the ingredients together until well mixed.
- For best flavor, cover and chill the salsa for at least 30 minutes to allow the flavors to meld.
- Serve with tortilla chips or as a topping for grilled chicken or fish.
Notes
This salsa is best made ahead of time to let the flavors meld. Leftovers can be stored covered in the fridge for a few days. If you prefer a milder salsa, reduce the amount of jalapeño. Try using this salsa as a topping for grilled chicken or fish for a delightful twist.
