Description

Irish lamb stew is a lesson in how restraint can produce extraordinary food. Lamb, potatoes, carrots, onions, and thyme — that is essentially the whole recipe. No wine, no tomatoes, no complex spice blends. Just good ingredients simmered together until the lamb is tender, the potatoes are breaking down into the broth, and the kitchen smells like a cottage in Connemara. Simplicity is the entire point.

Ingredients

Units
  • 2 1/2 lbs boneless lamb shoulder, cut into 1 1/2-inch cubes
  • 2 tablespoons vegetable oil
  • 3 large yellow onions, thickly sliced
  • 4 medium carrots, cut into 1-inch pieces
  • 2 lbs Yukon Gold potatoes, peeled and cut into large chunks
  • 4 cups chicken or lamb broth
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour

Instructions

  1. Season lamb with salt and pepper. Heat oil in a large Dutch oven over medium-high heat. Sear the lamb in batches until browned on all sides, about 4 minutes per batch. Remove and set aside.
  2. Add onions to the pot and cook 5 minutes until softened.
  3. Return the lamb to the pot. Add broth, thyme, and bay leaves. Bring to a boil, then reduce to a low simmer. Cover and cook 1 hour.
  4. Add potatoes and carrots. Cover and cook another 45 minutes until the lamb and vegetables are tender.
  5. If you want a thicker broth, mash butter and flour together into a paste. Stir it into the stew and simmer 5 minutes until thickened.
  6. Remove thyme sprigs and bay leaves. Taste and adjust seasoning. Stir in parsley.
  7. Serve in deep bowls with crusty bread for soaking up the broth.

Notes

  • Irish stew traditionally uses no wine, stock cubes, or tomatoes — just broth, meat, and root vegetables. The simplicity is the soul of the dish.
  • Lamb shoulder has the fat and connective tissue needed for braising. Lean leg meat will taste dry and tough after 2 hours.
  • Some of the potatoes will break down and naturally thicken the broth — this is intentional and desirable, not a mistake.
