Description

A classic Irish apple pie, perfect for St. Patricks Day. Flaky crust, sweet and spiced apples – a delicious dessert.


Ingredients

  • 1 1/2 cups (355 ml) all-purpose flour
  • 3/4 cups (177 ml) cake flour
  • 1/2 tsp salt
  • 1 tbsp granulated sugar
  • 1 cups (237 ml) unsalted butter
  • 1/4 cups (59 ml) sour cream
  • 1/8 tsp lemon juice
  • 6 small-medium Granny Smith apples
  • 1/2 cups (118 ml) granulated sugar
  • 2 tbsp all-purpose flour
  • 1/2 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1/2 tsp allspice
  • 1 egg
  • Sanding sugar

Instructions

  1. Preheat oven to 350°F (177°C). Grease a 9-inch pie pan.
  2. For the crust: In a large bowl, combine flours, salt, and sugar. Cut in butter and shortening until coarse crumbs are formed. Mix in sour cream and lemon juice. Continue mixing until a slightly lumpy dough ball forms. Wrap dough in plastic wrap and chill in the refrigerator for 1 hour.
  3. Once chilled, remove dough from refrigerator and cut it in half, keeping one half covered and refrigerated.
  4. Roll out one half of the dough to 1/8 inch thickness and place it into the pie shell, trimming any excess crust.
  5. For the filling: Place sliced apples in a large bowl. In a separate bowl, combine sugar, flour, nutmeg, cinnamon, and allspice. Sprinkle this mixture over the apples and gently toss with a fork. Pour apples into the prepared pie plate and add lemon juice.
  6. Roll out the remaining pie crust. Brush the bottom crust with beaten egg and place the top crust over the apples. Crimp the edges to seal. Brush the entire pie with egg wash and sprinkle lightly with sanding sugar. Cut 4 slits in the top crust to allow steam to escape.
  7. Bake in the preheated oven at 350°F (177°C) for 45 minutes, or until golden brown.
  8. Allow the pie to cool completely before serving. Serve with whipped cream or ice cream.

Notes

  • For a richer flavor, use a combination of Granny Smith and Honeycrisp apples.
  • To prevent a soggy bottom, brush the bottom crust with a thin layer of egg white before adding the apple filling.
  • Leftover pie can be stored in the refrigerator for up to 4 days and reheated gently in the oven or microwave.
