Description

Crispy chicken, bacon, and eggs nestled in fluffy biscuits, drizzled with sweet and spicy hot honey. Perfect for brunch or a fun weeknight dinner.


Ingredients

  • 1 (8 oz) (225 g) boneless, skinless chicken breast
  • 1/2 cups (60 g) rice flour
  • 1/4 cups (30 g) all-purpose flour
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 cups (60 ml) milk
  • 1 egg
  • 1/2 cups (120 ml) canola oil
  • 4 biscuits
  • 4 slices bacon
  • 4 eggs
  • 1/4 cups (60 ml) honey
  • 1 tsp hot chili oil

Instructions

Prepare the Chicken

  1. Place the chicken breast between two sheets of plastic wrap and pound to an even thickness. Cut into 4 equal pieces.
  2. In a bowl, whisk together the egg and milk.
  3. In another bowl, combine rice flour, all-purpose flour, black pepper, garlic powder, and salt.
  4. Dredge each chicken piece in the flour mixture, then dip into the egg mixture, and back into the flour mixture. Repeat for a double coating.

Fry the Chicken

  1. Heat canola oil in a large skillet over medium-high heat.
  2. Fry the chicken pieces for 3-4 minutes on each side until golden brown and cooked through.
  3. Transfer to a paper towel-lined plate to drain excess oil.

Cook the Bacon and Eggs

  1. In a separate skillet, cook bacon slices until crispy. Set aside.
  2. Fry eggs to your desired doneness.

Prepare the Hot Honey Sauce

  1. In a small bowl, mix honey and hot chili oil until well combined.

Assemble the Biscuits

  1. Split the biscuits in half.
  2. Place a piece of fried chicken on the bottom half of each biscuit.
  3. Drizzle with hot honey sauce.
  4. Top with a slice of bacon and a fried egg.
  5. Cover with the top half of the biscuit.

Notes

  • For extra crispy chicken, ensure the oil is hot enough before adding the chicken; the chicken should sizzle immediately upon contact.
  • To make these ahead, prepare the chicken and bacon separately and store in the refrigerator. Assemble the biscuits just before serving.
  • If you don’t have hot chili oil, add a pinch of cayenne pepper to the honey for a spicy kick.
