Description

These herbed cheese popover rolls are savory, light, and airy, featuring sharp cheddar and fresh chives for a delicious twist.


Ingredients

  • 3 1/2 cups milk
  • 4 cups all-purpose flour
  • 1 1/2 tsp kosher salt
  • 1 tsp baking powder
  • 6 large eggs, at room temperature
  • 1 3/4 cups shredded sharp cheddar cheese
  • 2 Tbsp fresh chives, chopped finely

Instructions

  1. Preheat your oven to 450°F (232°C). Grease a popover pan or muffin tin generously with butter or non-stick spray.
  2. In a saucepan, heat the milk over medium heat until it is lukewarm. Do not let it boil.
  3. In a large mixing bowl, sift together the all-purpose flour, kosher salt, and baking powder to ensure there are no lumps.
  4. In a separate bowl, beat the eggs using an electric mixer until they are light and frothy.
  5. Gradually add the warm milk to the eggs, mixing continuously to combine.
  6. Slowly add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  7. Fold in the shredded sharp cheddar cheese and chopped chives gently into the batter.
  8. Fill each cup of the prepared popover pan or muffin tin about 3/4 full with the batter.
  9. Bake in the preheated oven for 15 minutes, then reduce the temperature to 375°F (190°C) and continue baking for an additional 20-25 minutes, or until the popovers are puffed and golden brown.
  10. Remove from the oven and serve immediately while warm, with a pat of butter if desired.

Notes

Serve the popovers immediately after baking for the best texture. They pair well with soups and stews. If you don’t have fresh chives, you can substitute with dried chives, but use half the amount. Store leftovers in an airtight container and reheat in the oven to regain crispness.
