Description

Imagine biting into a crispy crust loaded with succulent lobster meat, melted gouda cheese, and wilted spinach. It's a decadent treat that's perfect for a special occasion, or even just a regular weeknight dinner.


Ingredients

  • 1 Tbsp Olive Oil
  • 3 Tbsp finely chopped onion
  • 1 cup sliced mushrooms
  • 2 cup spinach leaves
  • 1 Pizza Dough (store bought or homemade)
  • a little corn meal to sprinkle on pan
  • 1 cup cooked lobster meat
  • 1 1/2 cup shredded Gouda Cheese
  • about 1/2 cup shredded Mozzarella

Instructions

  1. Saute’ onion in olive oil until soft. Add mushrooms and continue sauteing until lightly browned. Add spinach and stir until just wilted. Remove from heat.
  2. Preheat oven to 450°F. If you have a pizza stone, heat the stone.
  3. I sprinkle corn meal on parchment paper and then slide the parchment onto the stone because I don’t have a pizza peel.
  4. Stretch dough and roll into 10-12″ round.
  5. Place on parchment paper.
  6. Cover with a kitchen towel and let dough rest for about 5 minutes.
  7. Spread mushrooms and spinach evenly across dough.
  8. Top with lobster and then the cheeses.
  9. Bake for 18-20 minutes until golden and bubbly
