- 4 cups (946 ml) rainbow carrots
- 2 cloves minced garlic
- 1 carton Pomi Organic Strained Tomatoes
- 1/3 cup extra virgin olive oil
- 1 cups (237 ml) water
- 2 cups (473 ml) chopped walnuts
- handful fresh basil
- sea salt
- lemon pepper
Instructions
- Sauté the garlic in olive oil over medium heat for 2 minutes. Add the carrots and sauté for a few more minutes, then reduce heat to medium-low.
- Add 1 carton (26.46 oz) of strained tomatoes and 1 cup of water.
- Add fresh basil, sea salt, and lemon pepper.
- Boil on medium-low heat for about 25 minutes, stirring occasionally.
Notes
- Toasting the walnuts before adding them enhances their flavor and creates a richer sauce.
- For a smoother sauce, blend it briefly with an immersion blender after simmering.
- Leftovers can be stored in the refrigerator for up to 5 days and frozen for up to 3 months.
