Description

A vibrant sauce brimming with carrots and walnuts. Perfect over pasta for a comforting weeknight meal.


Ingredients

  • 4 cups (946 ml) rainbow carrots
  • 2 cloves minced garlic
  • 1 carton Pomi Organic Strained Tomatoes
  • 1/3 cup extra virgin olive oil
  • 1 cups (237 ml) water
  • 2 cups (473 ml) chopped walnuts
  • handful fresh basil
  • sea salt
  • lemon pepper

Instructions

  1. Sauté the garlic in olive oil over medium heat for 2 minutes. Add the carrots and sauté for a few more minutes, then reduce heat to medium-low.
  2. Add 1 carton (26.46 oz) of strained tomatoes and 1 cup of water.
  3. Add fresh basil, sea salt, and lemon pepper.
  4. Boil on medium-low heat for about 25 minutes, stirring occasionally.

Notes

  • Toasting the walnuts before adding them enhances their flavor and creates a richer sauce.
  • For a smoother sauce, blend it briefly with an immersion blender after simmering.
  • Leftovers can be stored in the refrigerator for up to 5 days and frozen for up to 3 months.
