Juicy burgers topped with creamy guacamole, paired with perfectly roasted sweet potatoes. Ready in under 30 minutes!

- 1 sweet potato (237 g) sweet potato
- 0.5 red onion (119 g) red onion
- 2 tbsp olive oil (30 ml) olive oil

- 1 jalapeno pepper (237 g) jalapeno pepper

Instructions
- Preheat the oven to 450°F (232°C).
- Place sweet potato and red onion slices on a sheet pan.
- Drizzle with olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper.
- Toss to coat and bake 16-18 minutes, or until tender when pierced with a fork.
- Remove from oven and set aside.
- Mix together red onion, avocado, jalapeno pepper, and 1 tablespoon lime juice in a bowl.
- Stir in ¼ teaspoon salt and a pinch of black pepper.
- Taste and add more lime juice and seasoning if needed.
- Place ground beef in a bowl.
- Season with ¼ teaspoon salt and ¼ teaspoon black pepper.
- Mix and divide into two equal pieces.
- Form into two ½-inch thick patties.
- Heat 1 tablespoon oil in a non-stick skillet over medium heat.
- Add patties and cook 2-4 minutes per side, or until browned and cooked through.
- Place on a plate and cover loosely with aluminum foil to keep warm.
- Add buns, cut sides down, to the skillet.
- Add a tablespoon of oil to the buns if needed.
- Toast for 1-2 minutes, or until lightly browned.
- Place bottom buns on a plate and top with cooked patties and guacamole.
- Complete the burgers with the top buns.
- Serve burgers with roasted sweet potatoes and onions, and lime wedges on the side.
Notes
- For extra flavor, roast the sweet potatoes and onions with a sprig of rosemary or thyme.
- If you don’t have sesame seed buns, substitute any type of bun you prefer.
- Leftover guacamole can be stored in an airtight container in the refrigerator for up to 2 days.
