Description
Summer vegetables are grilled and served on a flatbread crust that is also grilled along with a creamy blue cheese, creating a visually stunning and flavorful dish perfect for a summer lunch or dinner.
Ingredients

- 2 store-bought flatbreads (such as pita)
- 1 zucchini, sliced
- 2 carrots, sliced
- 1 ear of corn, kernels removed
- 1 onion, sliced
- 2 tomatoes, sliced
- 1 cup blue cheese spread
- 1/2 cup crumbled blue cheese
Instructions
- Preheat the grill to medium-high heat.
- Grill the flatbreads until they are slightly charred and crispy.
- Grill the sliced zucchini, carrots, corn, onions, and tomatoes until they are tender and have grill marks.
- Spread the blue cheese spread over the grilled flatbreads.
- Top with the grilled vegetables.
- Sprinkle crumbled blue cheese over the top.
- Serve immediately.

Notes: Although I think this grilled vegetable pizza doesn’t need anything else, you are welcome to add grilled pieces of meat to it as well as any other vegetable that you wish.
