- 1 medium English cucumber
- 1/2 cups (118 ml) slaw mix
- 1 piece grilled salmon
For Dressing
- 1/4 cup reduced sodium soy sauce or tamari
- 2 tablespoons sweet chili sauce
- 1 tablespoon rice vinegar
- 1/2 teaspoon sesame oil
- Optional: Sesame seeds chopped scallions
Instructions
- Combine the grilled corn kernels, cucumber, and slaw mix in a large bowl. Add the grilled salmon on top.
- In a smaller bowl, whisk together all dressing ingredients until well combined.
- Pour the dressing over the salad and toss gently.
- Sprinkle with sesame seeds and chopped scallions, if desired. Top with the salmon.

- For optimal grilling, ensure your salmon fillets are about 1-inch thick for even cooking.
