Description

Flaked grilled salmon tossed with grilled corn, cucumber, and slaw mix. A sweet chili dressing adds a delightful kick.


Ingredients

  • 2 ears grilled corn
  • 1 medium English cucumber
  • 1/2 cups (118 ml) slaw mix
  • 1 piece grilled salmon

For Dressing

  • 1/4 cup reduced sodium soy sauce or tamari
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon sesame oil
  • Optional: Sesame seeds chopped scallions

Instructions

  1. Combine the grilled corn kernels, cucumber, and slaw mix in a large bowl. Add the grilled salmon on top.
  2. In a smaller bowl, whisk together all dressing ingredients until well combined.
  3. Pour the dressing over the salad and toss gently.
  4. Sprinkle with sesame seeds and chopped scallions, if desired. Top with the salmon.

Notes

  • For optimal grilling, ensure your salmon fillets are about 1-inch thick for even cooking.
