Grilled Goat Cheese Sandwich with Chicken and Spinach

Description

A quick, satisfying sandwich packed with flavor. Grilled goat cheese melts perfectly with chicken and spinach.


Ingredients

Units Scale
  • 1-2 blocks Bûcherondin French goat cheese
  • 1 large handful baby spinach
  • 0.5 cups (118 ml) chopped cooked chicken
  • sourdough bread
  • mayonnaise

Instructions

  1. Set indoor grill to sear.
  2. Spread mayonnaise on the outsides of the sandwich.
  3. Lay one slice on the hot grill, mayo side down.
  4. Add several slices of goat cheese, followed by spinach and chicken.
  5. Add top of sandwich and close the lid of the grill to sear the top.
  6. Wait several minutes to allow all the flavors to melt together and the bread to turn golden.
  7. Remove from grill and enjoy.

Notes

  • For easier grilling, use thinner slices of goat cheese. This will help them melt more evenly.
  • If Bûcherondin isn’t available, substitute another soft, creamy goat cheese.
  • To prevent sogginess, assemble the sandwich just before grilling.
