A quick, satisfying sandwich packed with flavor. Grilled goat cheese melts perfectly with chicken and spinach.

- 1-2 blocks Bûcherondin French goat cheese
- 1 large handful baby spinach
- 0.5 cups (118 ml) chopped cooked chicken
- sourdough bread
- mayonnaise
Instructions
- Set indoor grill to sear.
- Spread mayonnaise on the outsides of the sandwich.
- Lay one slice on the hot grill, mayo side down.
- Add several slices of goat cheese, followed by spinach and chicken.
- Add top of sandwich and close the lid of the grill to sear the top.
- Wait several minutes to allow all the flavors to melt together and the bread to turn golden.
- Remove from grill and enjoy.
Notes
- For easier grilling, use thinner slices of goat cheese. This will help them melt more evenly.
- If Bûcherondin isn’t available, substitute another soft, creamy goat cheese.
- To prevent sogginess, assemble the sandwich just before grilling.
