Description

Grilled corn spread with a Greek yogurt, blue cheese, and basil sauce, finished with lime juice and red pepper flakes for a heat that builds as you eat.

Ingredients

Units
  • 4 ears of corn
  • 2 tablespoons of Greek yogurt
  • 2 tablespoons of blue cheese, crumbled
  • 1/4 cup of fresh basil, chopped
  • 1 tablespoon of lime juice
  • 1 teaspoon of crushed red pepper flakes
  • Salt to taste

Instructions

  1. Grill the corn until tender and slightly charred.
  2. In a bowl, mix Greek yogurt, blue cheese, and chopped basil to form a thick paste.
  3. Spread the blue cheese and basil butter over the hot grilled corn.
  4. Finish with a drizzle of lime juice and a sprinkle of crushed red pepper flakes.
  5. Serve immediately.

Notes

  • Prepare the blue cheese and basil sauce ahead of time — it keeps in the fridge for up to a week.
  • This sauce is versatile beyond corn: try it on grilled fish or drizzled over peaches and nectarines.
  • For a spicier kick, increase the crushed red pepper flakes.
