Description
A simple and light meal for summer: grilled chicken, peaches, and onions atop fresh greens.
Ingredients
Units
- 1 tbsp (15 ml) white wine vinegar
- 1/2 tsp (2.5 ml) honey
- 1/4 cup (60 ml) olive oil
- Salt and pepper to taste
- 2 peaches, halved and pitted
- 1 lb (450 g) chicken breast
- 4 cups (240 g) mixed salad greens
- 1/4 cup (30 g) crumbled feta cheese
- 1/4 cup (30 g) sliced almonds
Instructions
- In a small bowl, whisk together the white wine vinegar, honey, and olive oil. Season with salt and pepper to taste.
- Preheat the grill to medium-high heat. Brush the peaches and chicken breast with a little olive oil.
- Grill the peaches for about 2-3 minutes on each side until grill marks appear and they are slightly softened.
- Grill the chicken breast for about 6-7 minutes on each side or until fully cooked and juices run clear.
- Let the chicken rest for a few minutes, then slice it thinly.
- In a large salad bowl, combine the mixed greens, grilled peaches, sliced chicken, feta cheese, and almonds.
- Drizzle the salad with the prepared dressing and toss gently to combine. Serve immediately.
