Description

Elevate a classic grilled cheese sandwich with a homemade sweet and spicy tomato chutney that adds a delightful twist.


Ingredients

Units
  • 4 slices of bread
  • 2 tablespoons butter
  • 4 slices of cheese
  • 1 cup tomatoes, chopped
  • 1/2 cup onions, chopped
  • 1/4 cup sugar
  • 1/4 cup vinegar
  • 1 teaspoon chili flakes
  • Salt to taste

Instructions

  1. Butter one side of each slice of bread.
  2. Place a slice of cheese between two slices of bread, buttered sides out.
  3. Heat a skillet over medium heat and grill the sandwiches until golden brown on both sides.
  4. For the chutney, combine tomatoes, onions, sugar, vinegar, chili flakes, and salt in a saucepan.
  5. Cook over medium heat until the mixture thickens.
  6. Serve the grilled cheese sandwiches with the tomato chutney on the side or spread inside.

Notes

The chutney can be stored in an airtight container in the fridge for up to three months. It’s versatile and can be used as a dip or spread. Experiment with different types of cheese for the sandwiches.
