Description

Mini-burgers made with ground turkey are a leaner alternative to beef burgers and are packed with flavor from traditional Greek ingredients.


Ingredients

  • 1 slice of bread, torn in small pieces
  • 2 tablespoons milk
  • 11/3 pounds ground turkey
  • 1/3 cup crumbled feta cheese
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped fresh oregano or 2 teaspoons dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup finely chopped cucumber
  • 1 cup plain yogurt
  • 1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
  • 1 teaspoon lemon juice
  • salt
  • pepper
  • 6 pitas, cut in half
  • tomato slices
  • onion slices
  • cucumber slices
  • mixed greens

Instructions

  1. Heat a grill or grill pan to medium high heat.
  2. In a large bowl, combine bread and milk. Mash with a fork until the bread is in very small pieces. Add turkey, feta cheese, onion, oregano, salt and pepper. Mix gently. Form into 12 sliders. Grill about three to four minutes per side and remove to a platter.
  3. In a small bowl, prepare the tzatziki. Combine cucumber, yogurt, oregano, lemon juice and season with salt and pepper.
  4. To serve, cut pitas in half. Fill each half with one slider, sliced tomato, onion, cucumber, mixed greens and a dollop of the tzatziki.
  5. Notes
  6. This is a great make-ahead dinner as the sliders can be grilled, then cooled and stored in the refrigerator.
  7. Prepare the tzatziki and slice the vegetables and store them in the refrigerator also.
  8. When it is dinner time, heat two sliders in the microwave on 70 percent power for about 1 minute. Serve in pitas along with the vegetables and tzatziki.
