Description

This asparagus salad is quick to make, visually beautiful, and fabulously delicious. Enjoy it as a side dish or as a light meal with some good crusty bread.


Ingredients

  • 1 bunch asparagus, washed and trimmed
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Preheat your grill to medium-high heat.
  2. Toss the asparagus with 1 tablespoon of olive oil and season with salt and pepper.
  3. Grill the asparagus for about 5 minutes, turning occasionally, until tender and slightly charred.
  4. In a large bowl, combine the grilled asparagus, cherry tomatoes, feta cheese, and red onion.
  5. In a small bowl, whisk together the remaining olive oil, lemon juice, and dill.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve immediately as a side dish or with crusty bread for a light meal.
