- 1/4 cup fresh grapefruit juice (60 mL)
- 1/4 cup fresh lime juice (60 mL)
- Generous pinch of salt
- Black pepper, to taste
- 1/4 cup olive oil (60 mL)
- 1 lb beef (cube, flank or skirt steak) (450 g)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 8 flour tortillas
- Optional toppings: sour cream, salsa, guacamole, shredded cheese
Instructions
- In a tupperware container, combine the grapefruit juice, lime juice, salt, black pepper, and olive oil. Close the container tightly and shake to mix the ingredients well.
- Add the beef to the marinade, ensuring it is well coated. Seal the container and refrigerate for at least 4 hours, or overnight for best results.
- Preheat a grill or skillet over medium-high heat. Remove the beef from the marinade and cook for about 4-5 minutes on each side, or until desired doneness. Remove from heat and let rest for a few minutes before slicing.
- In the same skillet, add the sliced bell peppers and onion. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
- Warm the flour tortillas on the grill or in a skillet for about 30 seconds on each side.
- Assemble the fajitas by placing slices of beef and cooked vegetables onto each tortilla. Add optional toppings such as sour cream, salsa, guacamole, or shredded cheese as desired. Serve immediately.
Notes
Marinate the beef for at least 4 hours to allow the flavors to penetrate deeply. You can substitute cube steak with flank or skirt steak if preferred. Serve with your favorite toppings like sour cream or guacamole. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
