Description

These cake donuts are rich, decadent, and utterly irresistible. The simple glaze perfectly complements the intense chocolate flavor.


Ingredients

  • 1 1/2 cups (355 ml) + 2 tbsp granulated sugar
  • 3 tbsp (42 g) butter
  • 5 large egg yolks (90 g)
  • 1 3/4 cups (425 ml) sour cream
  • 3 3/4 cups (473 ml) all-purpose flour
  • 3/4 cups (89 ml) Dutch-processed cocoa powder
  • 1 tbsp + 3/4 tsp baking powder
  • 1 tbsp + 1 tsp kosher salt
  • 96 fl oz (2841 ml) Canola oil
  • 100 ml (3.4 fl oz) whole milk
  • 3 1/4 cups (380 ml) powdered sugar
  • A pinch of kosher salt
  • 3 tbsp honey

Instructions

  1. Prepare the Donut Dough:
  2. In a large bowl, sift together flour, cocoa powder, and baking powder.
  3. Whisk in the salt and set aside.
  4. Line a large mixing bowl with plastic wrap, then spray its surface. Set aside.
  5. In a stand mixer with a paddle attachment, beat granulated sugar, butter, and yolks on high until fluffy (about 2 minutes).
  6. Mix in sour cream until smooth.
  7. Gradually add dry ingredients on low speed, mixing just until incorporated.
  8. Transfer the dough to the prepared bowl. Spray its top and cover with plastic wrap.
  9. Chill for 60 minutes.
  10. Shape and Cut:
  11. Prepare a baking sheet with parchment and nonstick spray.
  12. Flour a work surface and place dough on it. Roll to ½-inch thick.
  13. Using 3-inch and 1 ¼-inch ring cutters, cut donuts and holes.
  14. Place them on the baking sheet and refrigerate, covered, for 30 minutes.
  15. Prepare the Glaze:
  16. In a medium bowl, whisk together milk, powdered sugar, salt, and honey.
  17. Adjust consistency over simmering water if needed.
  18. Frying:
  19. Pour oil into a fryer or Dutch oven, ensuring it’s at least 2 inches deep.
  20. Heat to 350°F (177°C). Adjust to maintain this temperature.
  21. Fry 3 donuts at a time, flipping and frying until golden brown (approximately 80 seconds per side).
  22. Fry donut holes as indicated in the original recipe.
  23. Drain on a wire rack.
  24. Glazing:
  25. Once slightly cooled, dip donuts in glaze.
  26. Return to wire rack and allow glaze to set.
  27. Serve and Store:
  28. Enjoy the donuts fresh, ideally the day they’re made.
  29. Store any leftovers in an airtight container.

  • For richer chocolate flavor, use dark cocoa powder instead of Dutch-processed.
