Description

Sweet and savory chicken and bacon skewers, glazed with balsamic. Perfect for grilling or broiling!


Ingredients

  • 1/4 cups (60 ml) balsamic vinegar
  • 2 tbsp maple syrup
  • 1 tsp Badia Complete Seasoning
  • 1/4 tsp sea salt
  • 1 lbs (454 g) boneless, skinless chicken tenders or breasts, cut into bite-size chunks
  • 2 red and/or orange bell peppers, deseeded and chopped into bite-size chunks
  • 1 zucchini, chopped into bite-size chunks
  • 1 summer squash, chopped into bite-size chunks
  • 10 slices bacon

Instructions

  1. Preparing the Skewers:
  2. If using wooden skewers, soak them in warm water for 30 minutes to prevent burning.
  3. In a saucepan, combine balsamic vinegar, maple syrup, seasoning mix, and sea salt. Simmer for 5 minutes until thickened.
  4. Toss chicken pieces in the glaze. Marinate in the refrigerator for up to 8 hours.
  5. Assembling Skewers:
  6. Weave bacon, chicken, and vegetables onto each skewer, alternating between them. Use two bacon slices per skewer, weaving around the pieces.
  7. Preheat grill/broiler to medium-high heat.
  8. Cooking:
  9. Grill each side for about 5 minutes or broil for 8 minutes per side until the bacon and chicken are fully cooked.
  10. Let skewers rest for 5 minutes before serving.

Notes

  • For even cooking, ensure all chicken pieces are roughly the same size before marinating.
  • To prevent the bacon from burning too quickly, start by grilling the chicken and vegetables first, then add the bacon for the last few minutes of cooking.
  • Leftover skewers can be stored in the refrigerator for up to 3 days; reheat gently in a skillet or oven.
