Description

Spiced pancakes get a sophisticated twist with duck rillettes and cherries. Festive, yet perfect for any cocktail party.


Ingredients

  • 2 cups (473 ml) buttermilk
  • 2 cups (473 ml) plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 egg
  • 3 tablespoons butter
  • butter
  • 1 lbs (150 gm) duck rillettes
  • 30 fresh cherries
  • fresh tarragon

Instructions

  1. Combine flour, baking powder, baking soda, spices, sugar, and salt in a large bowl and whisk to combine.
  2. In a smaller bowl, whisk egg with melted butter, then add buttermilk and whisk gently until just combined.
  3. Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Whisk very gently until just combined; the mixture will be lumpy and uneven.
  4. Heat a cast iron pan to medium-high heat and add a small knob of butter.
  5. Pour 1 tablespoon of batter onto the hot pan for cocktail-sized pancakes. When bubbles appear on the surface, flip the pancakes to cook the other side. Repeat with the remaining batter, greasing the pan when necessary.
  6. When pancakes have cooled, top each with a scant teaspoon of room-temperature rillettes and fresh sliced cherry halves. Garnish with tarragon leaves.

Notes

  • For richer flavor, use dark brown sugar instead of granulated sugar.
  • To prevent sticking, use a lightly oiled non-stick pan instead of cast iron.
  • If duck rillettes are unavailable, substitute with another flavorful pate or a simple cherry compote.
