- 2 cups (473 ml) buttermilk
- 2 cups (473 ml) plain flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon

- 1/4 teaspoon nutmeg
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 egg
- 3 tablespoons butter

- 1 lbs (150 gm) duck rillettes
- 30 fresh cherries
- fresh tarragon
Instructions
- Combine flour, baking powder, baking soda, spices, sugar, and salt in a large bowl and whisk to combine.
- In a smaller bowl, whisk egg with melted butter, then add buttermilk and whisk gently until just combined.
- Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Whisk very gently until just combined; the mixture will be lumpy and uneven.
- Heat a cast iron pan to medium-high heat and add a small knob of butter.
- Pour 1 tablespoon of batter onto the hot pan for cocktail-sized pancakes. When bubbles appear on the surface, flip the pancakes to cook the other side. Repeat with the remaining batter, greasing the pan when necessary.
- When pancakes have cooled, top each with a scant teaspoon of room-temperature rillettes and fresh sliced cherry halves. Garnish with tarragon leaves.
Notes
- For richer flavor, use dark brown sugar instead of granulated sugar.
- To prevent sticking, use a lightly oiled non-stick pan instead of cast iron.
- If duck rillettes are unavailable, substitute with another flavorful pate or a simple cherry compote.
