Description

Flavorful London broil marinated in a zesty blend of garlic, habanero, and citrus. Tender and delicious, perfect for a weeknight dinner.


Ingredients

  • 2.25 lbs (1021 g) “London Broil” cut top round steak
  • 0.5 cups (118 ml) apple cider vinegar
  • 0.5 cups (118 ml) orange juice
  • 0.5 cups (118 ml) apple juice
  • 0.33 cups (79 ml) canola or peanut oil
  • 3 Tablespoons Garlic Tabasco Sauce
  • 2 Tablespoons fresh lemon juice
  • 4 teaspoons honey
  • 1.5 teaspoons salt
  • 1 scant teaspoon freshly grated orange zest
  • 0.5 teaspoon coarse ground black pepper
  • 0.5 teaspoon dry thyme
  • 0.5 teaspoon Habanero Tabasco Sauce

Instructions

  1. In a medium bowl, whisk together vinegar, orange juice, apple juice, oil, Garlic Tabasco Sauce, lemon juice, honey, salt, orange zest, pepper, and Habanero Tabasco Sauce until well combined.
  2. Remove the steak from its packaging. Pierce the meat on both sides with a knife or large fork, if desired.
  3. Place the meat in a large, resealable plastic bag. Pour the marinade over the meat, seal the bag, pressing out excess air.
  4. Marinate the meat for 4 to 24 hours, turning the bag over every few hours.
  5. Remove the meat from the bag and bring to room temperature. Discard the marinade.
  6. Grill the meat on an oiled rack over medium/high heat (approximately 375°F (190°C) to 450°F (232°C)) until a meat thermometer registers 135°F (57°C) to 140°F (60°C) (or 145°F (63°C) for a more well-done steak).
  7. Turn the London Broil once while grilling.
  8. Remove the meat from the grill and let it rest for 10 minutes.
  9. Cut the meat across the grain at a 45-degree angle.
  10. Serve warm or at room temperature.

Notes

  • For a less spicy marinade, reduce the amount of Habanero Tabasco Sauce or substitute with a milder chili sauce.
  • To ensure even cooking, use a meat thermometer to check the internal temperature of the steak.
  • Leftovers can be stored in the refrigerator for up to 4 days and are delicious sliced cold in sandwiches or salads.
