- 1 lb (16 oz) mushrooms, button or Baby Bella
- 2 tablespoons capers, rinsed and chopped
- 3 large garlic cloves, minced
- 2 tablespoons vegetable oil
- 3 tablespoons unsalted butter, cut into pieces
- 2 teaspoons lemon juice
- 2 tablespoons fresh parsley, minced
- Salt and pepper, to taste
Instructions
- Preheat the oven to 450 degrees F (232 degrees C).
- Clean the mushrooms with a wet paper towel. If any mushrooms are large, halve them.
- Place the mushrooms in a baking dish. Sprinkle over the chopped capers and minced garlic.
- Drizzle the vegetable oil over the mushrooms, then scatter the butter pieces evenly on top.
- Season with salt and pepper to taste.
- Roast in the preheated oven for 20 minutes, or until the mushrooms are tender and golden brown, stirring halfway through.
- Remove from the oven and immediately squeeze lemon juice over the mushrooms.
- Sprinkle with minced parsley before serving.
- Serve with crusty bread to soak up the flavorful juices.
