Description

Flaky cod fillets get a crunchy cracker crust, then are layered in soft Kaiser rolls with creamy coleslaw. Perfect for a quick weeknight meal.


Ingredients

  • 12 Ritz crackers
  • 2 garlic cloves minced
  • 1/4 cup fresh parsley
  • 1/4 tsp freshly ground pepper
  • 2 large ggs
  • 1 lbs (454 g) cod filets
  • 2 tbsp extra-virgin olive oil
  • 4 Kaizer rolls
  • 2 cups (473 ml) pre-made coleslaw mix
  • lemon wedges
  • 1/4 tsp salt

Instructions

  1. Combine the coleslaw and dressing in a medium bowl. Refrigerate until ready to use.
  2. In a food processor, combine crackers, parsley, garlic, salt, and pepper; pulse until smooth. Pour crumbs into a wide, shallow bowl.
  3. Lightly beat eggs in another shallow bowl. Place both bowls side-by-side.
  4. Dip each side of the fish in the egg mixture, shaking off excess, then coat with crumbs. Repeat with remaining fish filets.
  5. Prepare the tartar sauce: Combine ingredients in a food processor and pulse until pickles are finely chopped and the sauce is mixed but not pureed. Refrigerate until needed.
  6. Heat 1 tablespoon of oil in a large skillet over medium-high heat (about 375°F/190°C).
  7. Add 2 fish filets; cook until undersides are golden and crispy, about 3-4 minutes. Flip and cook for another 3 minutes. Transfer to a plate and tent with foil to keep warm.
  8. Reduce heat slightly, add another tablespoon of oil, and cook remaining filets as above.
  9. Place fish filets on bottom buns, top with coleslaw, and add top buns.

Notes

  • For extra crispy cod, ensure the cracker crumbs fully adhere to the fish; gently press them into the egg-dipped fillets.
  • If you don’t have Kaiser rolls, substitute with other soft rolls or even brioche buns.
  • Leftover cod can be stored in the refrigerator for up to 2 days; reheat gently in a skillet or oven before serving.
