Description
Bright, healthy popsicles packed with mango, ginger, and turmeric. Perfect for a chilly day or when you need a little extra zing.

- 2 tablespoons lemon juice
- 1/4 cup orange juice
- 3 cups (710 ml) diced mango
- 2-inch piece ginger, peeled and roughly chopped
- 2-inch piece of turmeric, peeled and roughly chopped (or 2 tablespoons ground turmeric)
- 1/3 cup honey
Instructions
- Peel and roughly chop the ginger and turmeric (if using fresh). Dice the mangoes into small pieces.
- In a food processor or blender, combine the lemon juice, orange juice, diced mango, ginger, turmeric, and honey.
- Blend the mixture until completely smooth.
- Pour the blended mixture into popsicle molds.
- Place the molds in the freezer for about 15-20 minutes or until they are just firm enough to hold a popsicle stick.
- Insert a popsicle stick into each mold, making sure it stands straight.
- Return the molds to the freezer and freeze until the popsicles are completely set, which should take at least a few hours.
- To serve, briefly dip the popsicle molds in warm water to release the popsicles.
Notes
- For a smoother texture, strain the blended mixture through a fine-mesh sieve before pouring into molds.
- Adjust the amount of honey to your preferred sweetness level. Taste and add more if needed.
- These popsicles can be stored in the freezer for up to 2 weeks. Wrap the molds tightly in plastic wrap to prevent freezer burn.
