Description
Doritos casserole is the ultimate guilty-pleasure dinner that kids lose their minds over and adults eat far more of than they will admit. Seasoned ground beef and beans layered with crushed Doritos, cheese, and a sour cream-tomato sauce, then baked until bubbly. The chips soften slightly in the middle but stay crunchy on top, creating a texture contrast that is genuinely addictive. It is not health food. It is fun food.

- 1 1/2 lbs ground beef (85/15)
- 1 packet (1 ounce) taco seasoning mix
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 can (10 ounces) diced tomatoes with green chiles (such as Rotel)
- 1 can (10.75 ounces) cream of chicken soup
- 1 cup sour cream
- 1 bag (9.25 ounces) Nacho Cheese Doritos, divided
- 2 1/2 cups shredded cheddar cheese, divided
- 1/2 cup sliced black olives
- 3 green onions, sliced
- Shredded lettuce and diced tomatoes for topping
Instructions
- Preheat oven to 350°F.
- Brown the ground beef in a large skillet over medium-high heat, breaking into crumbles, about 7 minutes. Drain excess fat. Stir in the taco seasoning and cook 1 minute. Add the pinto beans and diced tomatoes with green chiles. Simmer 5 minutes.
- In a small bowl, mix the cream of chicken soup and sour cream.
- Crush about two-thirds of the Doritos and spread in the bottom of a 9×13-inch baking dish. Layer the beef mixture over the chips. Spread the sour cream mixture over the beef. Sprinkle with 1 1/2 cups of cheddar and the black olives.
- Top with the remaining whole Doritos and the remaining 1 cup of cheddar.
- Bake 20 to 25 minutes until the cheese is melted and bubbly.
- Top with shredded lettuce, diced tomatoes, and green onions.
Notes
- Save the whole Doritos for the very top layer so they stay crunchy — crushed chips go in the base where they can absorb the sauce.
- The fresh lettuce and tomato added after baking are not just garnish — they provide a cool crunch that contrasts with the hot, cheesy casserole.
- This is best eaten immediately. Doritos casserole does not reheat well because the chips lose their texture completely.
