Description

These detox truffles combine the natural sweetness of dates with honey, cardamom, and a mix of almonds and pistachios for a healthy treat that satisfies your sweet tooth without refined sugar.


Ingredients

  • 7 oz (200 g) dates, pitted
  • 2 tbsp honey
  • 1 tbsp freshly squeezed orange juice
  • 1/4 tsp cardamom
  • 3.5 oz (100 g) pistachios, unsalted
  • 1.7 oz (50 g) almonds

Instructions

  1. Finely chop the dates and place them in a mixing bowl.
  2. Add the honey, cardamom, and freshly squeezed orange juice to the chopped dates. Mix well until the ingredients are fully combined and the mixture is sticky.
  3. In a skillet over medium heat, lightly toast the almonds and pistachios for about 3-5 minutes, stirring frequently to prevent burning. Remove from heat and let them cool slightly.
  4. Once cooled, grind the almonds and pistachios in a food processor until they reach a coarse consistency.
  5. Add all of the ground almonds and 50 g of the ground pistachios to the date-honey mixture. Reserve the remaining pistachios for coating.
  6. Mix everything thoroughly until the nuts are evenly distributed throughout the mixture.
  7. With your hands, form the mixture into small balls, about the size of a walnut.
  8. Roll each truffle in the reserved ground pistachios to coat the outside.
  9. Place the truffles on a tray and refrigerate for at least 30 minutes to firm up before serving.

Notes

Store the truffles in an airtight container in the refrigerator for up to a week. You can substitute other nuts like walnuts or cashews if desired. For a different flavor profile, try adding a pinch of cinnamon or nutmeg. These truffles are perfect for a post-holiday detox or a healthy snack any time.
