Description

Danish caramelized potatoes are traditionally eaten at Christmas. They are sweet, luxurious and absolutely delicious. But why wait until Christmas to try this fabulous invention, when you can eat it year round? In this version, they get treated with some sage and chili, giving them a fragrant zing that will make your heart sing.


Ingredients

2 pounds fingerling potatoes, boiled and peeled (907 grams)

1/2 cup granulated sugar (100 grams)

4 tablespoons butter (57 grams)

1 teaspoon chili flakes (1.8 grams)

45 fresh sage leaves, finely chopped


Instructions

1. Prepare the Potatoes:

  • Boil the fingerling potatoes in salted water until tender, about 15-20 minutes. Drain and allow them to cool slightly before peeling. Set aside.

2. Caramelize the Sugar:

  • In a large pan, add the granulated sugar and cook over medium heat. Allow the sugar to melt slowly without stirring, swirling the pan occasionally to ensure even melting. The sugar will begin to turn golden brown.

3. Add the Butter:

  • Once the sugar has caramelized, carefully add the butter to the pan. Stir continuously until the butter is fully melted and combined with the caramelized sugar, creating a smooth sauce.

4. Coat the Potatoes:

  • Add the boiled and peeled potatoes to the pan. Toss the potatoes in the caramel sauce, ensuring they are evenly coated. Continue to cook for 5-7 minutes, stirring frequently, until the potatoes are fully coated and caramelized.

5. Add Chili and Sage:

  • Sprinkle the chili flakes and chopped sage leaves over the caramelized potatoes. Gently stir to distribute the herbs and spices evenly.

6. Serve:

  • Serve the caramelized fingerling potatoes immediately as a side dish. They pair wonderfully with roast meats and festive meals.
