- 1 tbsp (15 ml) extra-virgin olive oil
- 1 medium yellow onion, finely chopped
- 1 tbsp (15 ml) finely chopped ginger
- 1 tbsp (15 ml) finely chopped garlic
- 1 tbsp (15 ml) curry powder
- 1 1/2 tsp fine sea salt
- 1 tsp ground cumin
- 4 cups (946 ml) small shreds roast chicken
- 4 1/2 tbsp (68 ml) mayonnaise
- 3 1/2 tbsp (53 ml) plain yogurt
- 2 tbsp (30 ml) fresh lime juice
- 2 tsp mild floral honey
- 1/4 cup plus 1 tbsp (70 ml) golden raisins
- 1 box good-quality crackers

Instructions
- Heat the oil in a 12-inch skillet over medium heat.
- Add the onion, ginger, and garlic, and reduce the heat to low.
- Cook, stirring occasionally, until softened, about 10 minutes.
- Add the curry, salt, and cumin; stir to combine and cook 1 minute more.
- Add the chicken and stir to combine.
- Transfer to a large bowl and let cool for a few minutes, then add the mayonnaise, yogurt, lime juice, and honey; stir to thoroughly combine.
- Stir in the raisins.
- Serve with the crackers and gourmet bites.
Notes
- For a richer flavor, use roasted chicken with skin.
- If the salad is too thick, add a tablespoon of chicken broth or water to thin it out.
- Store leftover salad in an airtight container in the refrigerator for up to 3 days.
