Description

Creamy goat cheese, crunchy pecans, and tart cranberries make these elegant little bites perfect for holiday gatherings or a simple appetizer.


Ingredients

  • 6 oz (170 g) plain goat cheese
  • 4 oz (113 g) mascarpone cheese
  • 1 cups (237 ml) chopped pecans
  • 0.5 cups (118 ml) dried cranberries
  • 0.25 cups (60 ml) chopped fresh sage

Instructions

  1. In a medium bowl, beat together goat cheese and mascarpone until fluffy and well blended. Place in the freezer for 20 minutes.
  2. Prepare a baking sheet by lining it with parchment paper.
  3. On a plate, combine pecans, cranberries, and sage.
  4. Scoop 1 tablespoon of the goat cheese mixture and roll into a ball. Roll the ball in the pecan, cranberry, and sage mixture. Reshape the ball if necessary. Place the finished ball onto the parchment-lined baking sheet. Repeat with the remaining cheese mixture.
  5. Place the baking sheet with cheese balls into the refrigerator. Remove from the refrigerator 1 hour before serving. Serve with crackers.

Notes

  • If your goat cheese is too firm, let it sit at room temperature for 15-20 minutes before mixing to ensure a smooth consistency.
  • For a sweeter bite, use sweetened dried cranberries instead of unsweetened.
  • These bites can be made ahead of time and stored in the refrigerator for up to 2 days. Bring to room temperature before serving for optimal flavor and texture.
