- 6 oz (170 g) plain goat cheese
- 4 oz (113 g) mascarpone cheese
- 1 cups (237 ml) chopped pecans
- 0.5 cups (118 ml) dried cranberries
- 0.25 cups (60 ml) chopped fresh sage
Instructions
- In a medium bowl, beat together goat cheese and mascarpone until fluffy and well blended. Place in the freezer for 20 minutes.
- Prepare a baking sheet by lining it with parchment paper.
- On a plate, combine pecans, cranberries, and sage.
- Scoop 1 tablespoon of the goat cheese mixture and roll into a ball. Roll the ball in the pecan, cranberry, and sage mixture. Reshape the ball if necessary. Place the finished ball onto the parchment-lined baking sheet. Repeat with the remaining cheese mixture.
- Place the baking sheet with cheese balls into the refrigerator. Remove from the refrigerator 1 hour before serving. Serve with crackers.

- If your goat cheese is too firm, let it sit at room temperature for 15-20 minutes before mixing to ensure a smooth consistency.
- For a sweeter bite, use sweetened dried cranberries instead of unsweetened.
