Description
A simple salad of roasted cabbage and pears with walnuts and blue cheese
Ingredients
- -1 head cabbage, cored and cut into wedges
- -2 pears, cored and cut into thin slices
- -1 tbsp olive oil
- -salt & pepper, to taste
- -half of one lemon
- -1/4 cup toasted chopped walnuts
- -blue cheese, to taste
Instructions
- Place cabbage and pears on a baking sheet lined with foil and sprayed with cooking spray. Toss cabbage and pears with olive oil and sprinkle with salt and pepper.
- Roast at 400F for 40-45 minutes, turning once.
- Remove from oven and arrange on platter. Sprinkle with walnuts and blue cheese. Squeeze lemon juice over salad.
