Description

Enjoy a refreshing and healthy frozen treat with these Coconut Milk and Honey Pops, made with local ingredients and no added sugar.


Ingredients

  • 15 oz (443 ml) Coconut Milk
  • 3 tbsp (45 ml) Honey
  • 2 tbsp (15 g) Shredded Coconut (optional)

Instructions

  1. In a bowl, mix the coconut milk, honey, and shredded coconut (if using) until well combined.
  2. Pour the mixture evenly into four 4-oz (118 ml) popsicle molds.
  3. Place the molds in the freezer and freeze for at least 4 hours, or until the pops are solid.
  4. To remove the pops, run the molds under warm water for a few seconds to loosen them.

Notes

  • This recipe makes four pops.
  • It’s easy to make more, just double the ingredients.
  • The shredded coconut will sink to the bottom, but that’s a good thing, you get to eat them first.
  • If you can’t find local coconut milk and honey, there are many great options at the supermarket.
  • Ensure you buy coconut milk, not coconut cream.
