Description

Enjoy a refreshing and healthy frozen treat with these Coconut Milk and Honey Pops, made with local ingredients and no added sugar.


Ingredients

  • 15 ounces (443 ml) Coconut Milk
  • 3 tablespoons Honey
  • 2 tablespoons Shredded Coconut (optional)

Instructions

  1. In a bowl, mix the coconut milk, honey, and shredded coconut (if using) until well combined.
  2. Pour the mixture evenly into four 4-ounce (118 ml) popsicle molds.
  3. Place the molds in the freezer and freeze for at least 4 hours, or until the pops are solid.
  4. To remove the pops, run the molds under warm water for a few seconds to loosen them.

Notes

This recipe makes four pops. It’s easy to make more, just double the ingredients. The shredded coconut will sink to the bottom, but that’s a good thing, you get to eat them first. If you can’t find local coconut milk and honey, there are many great options at the supermarket. Ensure you buy coconut milk, not coconut cream.
