Description

This Coca Cola Quail recipe offers a unique blend of caramelly sweet and sour flavors with a Chinese twist, perfect for an elegant and quick-cooking meal.


Ingredients

Units
  • 1 packet of Game Farm Quail (6), boned (or 500 g of chicken, 6 drumsticks, or 4 butterflied Spatchcocks)
  • 100 ml peanut oil
  • 4 tbsp (60 ml) soy sauce
  • 1 tbsp (15 ml) finely grated ginger
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 tbsp (60 ml) tomato sauce
  • 1 can (375 ml) Coca Cola
  • 200 g snow peas
  • Salt and pepper to taste
  • 1 sliced large red chilli, 1 cup coriander leaves and a handful of cashews, for garnish

Instructions

  1. Place the quails (or chosen meat) into a shallow bowl. Pour over the soy sauce and ginger, and let them marinate for at least 10 minutes, or up to overnight for best flavor.
  2. Heat a wok or large frying pan over medium-high heat and add the peanut oil.
  3. Add the finely chopped onion and minced garlic to the pan, sautéing until the onion is soft and translucent, about 3-4 minutes.
  4. Increase the heat to high and add the marinated quails to the pan, cooking for about 5 minutes on each side until they are browned and cooked through.
  5. Pour in the Coca Cola and tomato sauce, and stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to medium and let it simmer for 10 minutes, or until the sauce has thickened and become glossy.
  7. Add the snow peas, cover the pan, and cook briefly until they are still crisp but lightly steamed.
  8. Season with salt and pepper to taste.
  9. Transfer the quails to a serving platter, spoon the sauce over them, and garnish with sliced red chilli, coriander leaves, and cashews.

Notes

  • Quail can be substituted with chicken drumsticks or Spatchcock for a different take.
  • Marinate the meat as long as possible for deeper flavor.
  • This dish is best served immediately but can be stored in the refrigerator for up to 2 days.
  • Reheat gently to maintain the sauce’s consistency.
