Description

This Coca Cola Quail recipe offers a unique blend of caramelly sweet and sour flavors with a Chinese twist, perfect for an elegant and quick-cooking meal.


Ingredients

  • 1 packet of Game Farm Quail (6), boned (or 500g of chicken, 6 drumsticks, or 4 butterflied Spatchcocks)
  • 100ml peanut oil
  • 4 tablespoons soy sauce
  • 1 tablespoon finely grated ginger
  • 1 small onion, finely chopped
  • 1 can (375ml) Coca Cola
  • 2 tablespoons lemon juice
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped spring onions and sesame seeds for garnish

Instructions

  1. Place the quails (or chosen meat) into a shallow bowl. Pour over the soy sauce and ginger, and let them marinate for at least 10 minutes, or up to overnight for best flavor.
  2. Heat a wok or large frying pan over medium-high heat and add the peanut oil.
  3. Add the finely chopped onion and minced garlic to the pan, sautéing until the onion is soft and translucent, about 3-4 minutes.
  4. Increase the heat to high and add the marinated quails to the pan, cooking for about 5 minutes on each side until they are browned and cooked through.
  5. Pour in the Coca Cola, lemon juice, brown sugar, and rice vinegar. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to medium and let it simmer for 10 minutes, or until the sauce has thickened and become glossy.
  7. Stir in the sesame oil and season with salt and pepper to taste.
  8. Transfer the quails to a serving platter, spoon the sauce over them, and garnish with chopped spring onions and sesame seeds.

Notes

Quail can be substituted with chicken drumsticks or Spatchcock for a different take. Marinate the meat as long as possible for deeper flavor. This dish is best served immediately but can be stored in the refrigerator for up to 2 days. Reheat gently to maintain the sauce’s consistency.
