Description

Golden turmeric and tart citrus brighten this crunchy granola. Perfect with yogurt or milk!


Ingredients

  • 2 cups (473 ml) GF oats
  • 0.75 cups (177 ml) quinoa
  • 1 tsp sea salt
  • 1 tbsp grapefruit or lemon zest
  • Juice of one whole grapefruit
  • 0.25 cups (59 ml) maple syrup
  • 2 tbsp raw local honey
  • 1 tbsp coconut oil
  • 1 tsp vanilla
  • 2 tsp turmeric
  • 0.25 cups (59 ml) roasted flax seeds
  • 0.5 cups (118 ml) dried goji berries

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, combine oats, quinoa, and sea salt. Set aside.
  3. In a small saucepan over low heat, combine grapefruit zest and juice with maple syrup, honey, coconut oil, vanilla, and turmeric. Stir until well incorporated and the coconut oil has melted.
  4. Mix the wet ingredients into the bowl with the dry ingredients. Stir until well incorporated.
  5. Transfer the granola to a baking sheet and bake for 30 minutes, stirring once halfway through.
  6. Remove from oven, then add goji berries and flax seeds, if using. Mix and let cool completely.
  7. Transfer the granola to a sealed container.
  8. Serve over yogurt, with milk, or with your preferred fruit.

Notes

  • For a more intense citrus flavor, use both grapefruit and lemon zest.
  • To prevent burning, use a baking sheet with sides to contain the granola while baking.
  • Store granola in an airtight container at room temperature for up to 2 weeks.
