Description

Sweet and savory pork loin marinated in a vibrant citrus mojo. Perfect for a weeknight dinner or a special occasion.


Ingredients

  • 1.5 lbs (680 g) Farm Promise boneless pork loin
  • 0.5 cups (118 ml) orange juice
  • 0.25 cups (60 ml) lime juice
  • 0.5 cups (118 ml) pineapple juice
  • 0.25 cups (60 ml) olive oil
  • 2 tbsp honey
  • 2 tbsp fresh oregano
  • 5 cloves garlic
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 2 tsp cumin

Instructions

  1. Combine salt, pepper, and cumin in a small bowl; rub all over the pork.
  2. Combine orange juice, lime juice, pineapple juice, ¼ cup olive oil, honey, garlic, and oregano in a large ziplock bag. Add the pork, seal, and marinate in the refrigerator for 4 hours (or up to overnight), turning several times.
  3. Preheat oven to 375°F (190°C). Heat a large frying pan over medium-high heat. Sear the pork on all sides, including the ends.
  4. Transfer the pork to a shallow roasting pan or a wire rack over a baking tray; cover with foil. Bake for 35-40 minutes (about 15-30 minutes per pound), or until the internal temperature reaches 145°F (63°C).
  5. Bring the marinade to a rolling boil in a small saucepan for 3-4 minutes; set aside.
  6. Remove pork from oven and let rest at least 5 minutes. Slice into ½” thick rounds and pour reserved marinade over before serving.

Notes

  • For a deeper flavor, marinate the pork loin for at least 8 hours or overnight.
  • Substitute other citrus juices, such as grapefruit or lemon, for some of the orange or lime juice.
  • Leftovers can be stored in the refrigerator for up to 4 days and are delicious cold or reheated.
