Description

A delicious gluten-free and dairy-free breakfast parfait.
Layers of spiced pumpkin oatmeal, coconut yogurt, and granola make a healthy and satisfying start to your day.


Ingredients

  • 1 cups (237 ml) almond milk
  • 1 cups (237 ml) gluten-free oats
  • 1/8 tsp. almond extract
  • 1/2 cups (118 ml) dairy-free coconut yogurt
  • 2 tbsp. gluten-free granola
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. pumpkin pie spice
  • 1 tsp. coconut flakes

Instructions

  1. In a small saucepan, combine 3/4 cup almond milk and oats.
  2. Cook over medium heat until the mixture is thick, approximately 3 minutes.
  3. Remove from heat; stir in almond extract and pumpkin pie spice.
  4. Set aside.
  5. In a parfait glass or tall jar, layer cooked oats, yogurt, and granola.
  6. Top with cinnamon and coconut flakes.
  7. Serve chilled.

Notes

  • For a creamier oatmeal, use 1 cup of almond milk instead of 3/4 cup.
  • To make this a make-ahead breakfast, prepare the oatmeal and layer the parfait the night before. Refrigerate overnight.
  • If you don’t have coconut yogurt, substitute with another dairy-free yogurt or even a plain Greek yogurt for a richer flavor.
