Layers of spiced pumpkin oatmeal, coconut yogurt, and granola make a healthy and satisfying start to your day.

- 1 cups (237 ml) almond milk
- 1 cups (237 ml) gluten-free oats
- 1/8 tsp. almond extract
- 1/2 cups (118 ml) dairy-free coconut yogurt
- 2 tbsp. gluten-free granola
- 1/4 tsp. ground cinnamon
- 1/4 tsp. pumpkin pie spice
- 1 tsp. coconut flakes
Instructions
- In a small saucepan, combine 3/4 cup almond milk and oats.
- Cook over medium heat until the mixture is thick, approximately 3 minutes.
- Remove from heat; stir in almond extract and pumpkin pie spice.
- Set aside.
- In a parfait glass or tall jar, layer cooked oats, yogurt, and granola.
- Top with cinnamon and coconut flakes.
- Serve chilled.
Notes
- For a creamier oatmeal, use 1 cup of almond milk instead of 3/4 cup.
- To make this a make-ahead breakfast, prepare the oatmeal and layer the parfait the night before. Refrigerate overnight.
- If you don’t have coconut yogurt, substitute with another dairy-free yogurt or even a plain Greek yogurt for a richer flavor.
