Description

Sweet, cinnamon-y, and with a great nutty crunch, these date bites are a perfect snack to have on hand in your freezer for when hunger strikes.


Ingredients

Units Scale
  • 1 lb Medjool Dates, pitted
  • 1 tsp Coconut Oil
  • 3/4 tsp Cinnamon
  • 1/2 cup Ground Mixed Nuts (Almonds, Walnuts, etc.)
  • 1/4 tsp Salt
  • 1/2 tsp Chia Seeds
  • 1/2 cup Almond Meal

Instructions

  1. In a food processor, combine the Medjool dates, coconut oil, cinnamon, ground mixed nuts, salt, and chia seeds. Pulse until the mixture comes together in a ball. You may want to process the dates on their own first to ensure they are well chopped.
  2. Once the mixture is well combined, use your hands to form small bite-sized balls.
  3. Roll each ball in the almond meal until fully coated.
  4. Place the coated balls on a baking sheet lined with parchment paper and freeze for at least 30 minutes to set.
  5. Store the date bites in an airtight container in the freezer for up to 3 months. Enjoy them straight from the freezer for a refreshing snack.

Notes

These date bites are naturally sweetened with dates and can be stored in the freezer for up to 3 months. They are perfect for a quick, healthy snack. You can substitute the mixed nuts with your favorite nuts. If you prefer a finer texture, process the dates separately before adding other ingredients.
